When it comes to Thanksgiving dinner, the turkey is the centerpiece and some cooks won't settle for an ordinary, grocery store bird.

Rudy Schickler, of Round Rock, reserved his bird earlier this year and made a trip to Taylor to pick it up on Tuesday.

Why all the fuss for a turkey? Because Schickler’s bought his bird from Fresh Pastures Farm and his turkey was pasture-raised and is all organic.

"You feel good about it but it is also just the taste,” Schickler said, “is out of this world.”

Brie Rabon and her family are new to the world of farming. The farm came about as an effort to know where their food was coming from.

"What we quickly discovered was that in the process of raising food just for our own family we could increase and increase, instead of doing 10 chickens we could do 100 chickens and then provide chicken for ten other families," Rabon said.

Now, her small farm boasts—among other things—organic, GMO-free and pasture-raised turkey. In other words, they’re birds that live great lives, right up until the end.

"What we say about our animals is that they have a wonderful life with just one bad day," Rabon said.

For Schickler, it is bigger than just dinner.

"With the current rate of unemployment, with the way big business treats things, it is nice to support locally and support people who are trying to make a difference just in the smaller scale," he said.

Each year varies, but they have raised up to 200 turkeys at a time—a job that takes the efforts of the whole family.

"It is kind of like child birth and the end of the day when were absolutely exhausted from processing turkeys my husband says 'No more, never again, we’re not doing this’," Rabon said.

They get the baby birds back in June and then process each one by hand three days before the holiday.
